1 cup all-purpose flour 2 tbsp white sugar 2 tsp baking powder 1/2 tsp salt 1 cup milk 1 egg 2 tbsp vegetable oil For Filling: 1/4 cup packed brown sugar 2 tsp ground cinnamon 2 tbsp butter, softened
In a large bowl, whisk together the flour, white sugar, baking powder and salt. In a separate bowl, beat together the milk, egg and vegetable oil.
Pour the milk mixture into the flour mixture and whisk until just combined (do not overmix).
For the filling, mix together brown sugar and cinnamon in a small bowl.
Lightly grease a griddle and heat over medium-high heat. Pour a small ladle of batter onto the griddle. Spoon about 1 tbsp of the filling mixture on top.
Cover with another small pancake. Cook until lightly browned on both sides.
For the glaze, mix together the powdered sugar, milk and vanilla until smooth. Drizzle glaze over the pancakes before serving.
Garnish with extra cinnamon or festive toppings like sprinkles or crushed candy canes if desired.
